E - Extremely Healthy Brownies

My mum started slimming world a couple of months ago and so she's been trying to find healthier ways of eating the same (or similar) foods. Recently, she found a recipe on Pinterest of Slimming World Brownies that have less fat in as they don't include simple ingredients such as flour and sugar, and instead the only ingredient that really has any calories in is cocoa powder, this makes the texture slightly different to your usual brownie however they are still super tasty.

Slimming World ½ Syn Chocolate Brownies:

This recipe should take around 40 minutes all together, including prep time and cooking time, and should make around 25 small brownies - but you only want to eat a small amount of them at a time anyway as they're quite rich and filling.

Ingredients:

6 Eggs (Separated)
70g Splenda (or other sweetener)
60g Cocoa Powder (not Hot Chocolate)
1tsp Vanilla Essence
Fry Light

Method:

1) Preheat the oven to 180 degrees
2) Spray the baking tin with Fry Light and line it with greaseproof paper
3) Whisk the egg whites until they form soft peaks.
4) In a separate bowl to the egg whites, add the egg yolks, sweetener, vanilla essence and cocoa powder
5) Whisk the mixture until it's fully mixed (You can add a bit of water if the mixture is too stiff)
6) After that, fold in the egg whites
7) Pour the mixture into the baking tin
8) Bake the brownies for 25-30 minutes and cut into approximately 2
5 brownies

You can enjoy the brownies hot or cold, however we preferred the brownies when they had cooled down as we found the less rich and more tasty!
